One Week of Summertime Recipes

I filmed what our family eats in a week for dinners, and by week I mean Monday through Friday! It was an incredibly hot week in July, so I planned the meals accordingly. Hopefully it gives you some ideas!
Monday = Sandwiches on Sourdough, Salad, and Watermelon
Monday I kept things simple but it was delicious for a hot and humid day. Sandwich spread recipe below and click here for my sourdough bread recipe.
Tuesday = Shrimp Tacos with Pineapple Salsa
These tacos became a family favorite! Use toppings of your choice. I used cabbage, cilantro, red onions, avocado, cheese, limes for fresh juice, shrimp, pineapple salsa, and sauce. I also whipped up fruit smoothies as a side/dessert.
The recipes below are for the pineapple salsa and the sauce for tacos.
Wednesday = Easy Peasy, Sourdough Pizza
When I'm planning on baking my sourdough bread, I often combine our pizza night on the same day because I'm already feeding my starter so it's nice and bubbly in the evening.
DIRECTIONS: Simply heat your oven in 425 (with cast iron pan inside). Once hot, oil pan and spread starter across the bottom. Drizzle with olive oil and sprinkle with Italian seasoning then bake for 12 minutes. Take out of oven, and put on your toppings. I like to put cheese down first before the pizza sauce to keep the crust from getting soggy. Go light on the sauce. Finish with desired toppings, return to oven for around 5 minutes. Serve.
Thursday = Pork Ribs & Baked Beans
Pork ribs are a favorite 'set & forget' meal.
DIRECTIONS: I prep the meat by taking off the membrane on the back, sprinkle with salt and pepper, wrap in tinfoil and pop in the oven at 325. I let it bake for at least 3 hours, maybe a little more as the meat just falls off the bone with a longer bake.
Unwrap and spread BBQ sauce on top, return to oven and broil for a few minutes. I served it with a side of baked beans for Nolan and applesauce for the children.
Friday = Marinated Grilled Chicken, Asparagus, & Bacon Wrapped Pineapple
Want to hand off most of the work to your husband? This is a delicious meal you can throw on the grill, although I roasted the asparagus in the oven (tossed in oil, salt, pepper, & italian seasoning). For the pineapple, simply wrap pineapple chunks with bacon and put on skewer.
